What is light, creamy, and with lots of layers? …Crepe cake!
To make a good crepe cake, first you’ll need to have thin layers. Thick layers will give you a dense, hard cake, but thin layers will give you a soft, chewy texture that is oh so unforgettable. The other benefit of having thin layers? well, less carbs of course! I always use unbleached flour with an added blend of wheat pastry flour and coconut flour for some extra nutrients.
Second, since this fruit is so popular with the asian crowd and you can’t really get this flavored crepe cake elsewhere, I present to you, durian crepe cake! Durian has a second title called ” The king of fruits” because of its high nutrients. Durian is rich in dietary fiber, potassium, vitamin-C, B-complex vitamins, and natural Tryptophan(also referred as “nature’s sleeping pill”). Further, it also contains a good amount of minerals like manganese, copper, iron and magnesium. Manganese is utilized by the body as a co-factor for the antioxidant enzyme, superoxide dismutase. Copper is required in the production of red blood cells. Iron is required for red blood cell formation.
